The problem is how to deliver this information in a logical way - and I have decided to serve it up as the road rolls under you. Cycling Touring in New Zealand
Best thing I can do here is send you to the New Zealand Mountain Bike Web which has a lot of info on general cycle touring. It is a bit dated now, but still 95% useful.
